This recipe is from Lori Smith. I made it last night for some friends we had over for dinner and we all really liked it. The part I like best is that you can have real cheese cake within a little amount of time! I added a little strawberry yogurt to the recipe and instead of cherry pie filling, I made a homemade strawberry sauce with some strawberries I found on sale this week. I also did each mini cake with a graham cracker crust. Mmmmmm, so good and so fast!
Ingredients:
cherry pie filling or other sauce for topping
cream cheese mixture:
2 8 oz. packages of cream cheese
3/4 cup sugar
2 eggs
1 tsp. vanilla
crust options:
vanilla wafers or coconut cookies. (Or use 1 package of graham crackers, crushed and mixed with 1/4 cup melted butter for individual graham cracker crusts.)
Directions:
Put vanilla wafers in small cupcake paper, round side down (or press cracker crumbs mixture down into each paper). Fill 2/3 full of cheese mixture. Bake at 375 for 8-10 minutes. Cool. Top with cherry pie filling. If freezing, leave out cherry pie filling until ready to serve.
