Here's another one that's fast and yummy! Make sure not to cook the chicken too long, but just till it's done and still very tender and juicy. This is by JoAnn Goodrich.
Parmesan Chicken
6 boneless, skinless chicken breasts (approx. 2 lbs.)
2 Tbsp. melted butter or margarine (To this I add 1/8 cup milk and one egg)
1/2 cup grated Parmesan cheeses (2 oz.)
1/4 cup dry bread crumbs ( I like to use 1/2 a box of Chicken Stovetop dressing mix crushed up because of the seasoning).
1 tsp. dried oregano
1 tsp. parsley flakes
1/4 tsp. paprika
1/4 tsp. salt
1/4 tsp. pepper
Preheat oven to 400 degrees. Spray 13x9 inch baking pan with nonstick cooking spray. Melt butter in a shallow dish. Mix remaining ingredients in another shallow dish. Dip chicken in melted butter mixture, then coat chicken with dry ingredients. Place in baking dish. Bake 2o-25 minutes or until juices run clear. Takes 35 minutes (10 min. prep)
