I Love this recipe! If you want Asian food right at home, this is a classic! I like to steam the broccoli in 1" of water until it's just perfectly done; bright green and still a little firm. Same with the meat. Marinate it for at least 20 minutes and saute until still tender, but all brown. Be sure to trim off fat and sinews too. Mmmmmm! This recipe is from Ada Wilson.
Beef Broccoli
1 to 2 lbs. cut up Skillet Steak for marinating
2 Tbs. Soy Sauce
2 Tbs. Corn Starch
2 Tbs. Oil
1 tsp. Ground Ginger
dash of Salt
4 cups Broccoli
2 tsp. Oil
1/8 cup Water
1 Tbs. Oil
Gravy
Gravy
2 cups Beef Broth
2 Tbs. Corn Starch
2 Tbs. Soy Sauce
3 Tbs. Oyster Sauce, or more Beef Broth
(Heat all ingredients for Gravy to a boil in a separate sauce pan. Boil until thickened. Set aside.)
1. Combine first 6 ingredients and marinate for at least 20 minutes.
2. Saute on high heat, the broccoli in 2 Tbs Oil (or just steam).
3. Add 1/8 cup water, cover, steam one minute.
4. Take broccoli out, put in meat with the last Tbs. of Oil. Stir fry for 5 minutes.
5. Add Broccoli and Gravy. Serve over rice.
