Ham Fried Rice

I like this dish as a side dish or as the main. It's yummy and doesn't take too much to fill you up. Try it out!

Ingredients:
1 cup ham or real bacon bits
1/2 cup finely chopped celery
1/4 cup onion (I prefer green)
2 eggs
3 tsp. soy sauce
2 cups cooked rice

Directions:
Warm Ham. Add onions and celery. Cook until just wilted and remove from pan. Scramble the eggs. Add the ham, vegetables and the rice. Sprinkle with soy sauce and heat thoroughly.

This recipe is from a family cookbook I have. The contibuter's name is Carolee H. Smith.
Em's tips:
1. I prefer to chop all the ingrediants for this dish very finely- even the eggs after they've been scrambled- so they will blend together well and give it a more resturant-like texture.
2. Try cooking this with brown rice if you'd like to get more bang for your buck carb-wise!

  1. When i do ham fried rice, Instead of scrambling the eggs, I wisk them up really good and pour them into the bottom of the frying pan with a little oil and let them set like a big pancake. Then I cut them into strips. It's just how I like it :) Mmmmmmm....
